love Oreos-ish

Every now and then, more often than not, (love me not)(she loves me, she loves me not)(love, love me do) we like to cook up a little something sweet. We usually choose an international recipe to share with you, and it’s always an easy one as we’re language lovers and don’t love cooking (we are of course also food lovers though).

Speaking of language did you know that the 14th of February is Valentine’s Name Day? Valentine, which in other languages can take other forms, masculine (as in Valentino) and feminine (as in Valentina) comes from the latin Valenus meaning healthy and strong from which the Roman name Valentinus is derived – which is how the Roman martyr Saint Valentine got his name.

This time we got our hands on a simple traditional American sugar cookie recipe, a heart shaped cutter, and dreamt up some love Oreos-ish treats.

How to

There’s really nothing to it, Sugar, as the name “sugar cookie” states, butter, egg, vanilla extract, flour, baking powder, salt, and a drop of food coloring. And, in that order, or almost.

Beat 200 grams (1 cup) of sugar with 225g (1 cup) of butter til fluffy. Add 1,5 tsps of vanilla extract and a large egg, beat.

In a separate bowl combine 375 grams (2,5 cups) of flour (any kind) with 3/4 tsps baking powder and 3/4 teaspoon of salt. (If you live in one of those countries that baking powder already has the vanilla mixed in that’s fine too, just use a full teaspoon of the mix.)

Bit by bit add the dry ingredients to the wet until they are fully blended, add your drops of red food coloring and mix in (just a little if you want a marble effect). Chill for about an hour then roll out and cut with your heart <3 shaped cutter.

Lay those lovely darlings out on baking paper on a baking tray and bake at 180° celsius until the edges turn a little brown but you don’t burn out all of the pink color.

Let cool on a rack (takes about 10 minutes max) and add the filling on one of the cookies, sandwich the other on top.

For the filling

75 grams softened butter

85 grams (3/4 cup) cups icing sugar

1 tsp vanilla extra

1 drop of milk for consistency

A drop of coloring if you want it

Throw it all in together and whisk it all up until it’s smooth, butter it on one side of your cookie and sandwich it with the other! Love at first bite!
